Will the roots still be there after grinding?

Yes -- grinding takes the visible stump down below ground level, but the roots stay in the ground and break down naturally over time. If you need the whole root system out, for example ahead of building or laying a foundation, full excavation rather than grinding is the right option.

Can you remove a stump without damaging my lawn or drive?
